Lemon Bars
Crust:
½ c. butter, softened
¼ c. sugar
1 1/3 c. flour
Filling:
2 eggs ¼
tsp. baking powder
¾ c. sugar 3
Tbsp. lemon juice
2 Tbsp. flour powdered
sugar
Combine crust ingredients in large bowl. Mix in low speed until blended. Pat into ungreased 9 x 13 inch baking
pan. Bake on the center rack of a 350
degree oven for 15 to 20 minutes or until brown on the edges.
Meanwhile, prepare filling and pour over the crust. Return to oven for 18 to 20 minutes or until
set. Sprinkle with powdered sugar and
let cool.
Cut into squares and enjoy the season!
